Baked Peach Pancake - A Sunday Kind of Thing

Don’t you just love pancakes? This one is great for a leisurely morning when there is nothing else on your plate (pun intended) for the day.peach pancake

I think this was a Taste of Home recipe; I’ve had it a long time and it’s really good.

2 cups fresh (or frozen if you have to) sliced, peeled peaches.
4 teaspoons sugar
1 teaspoon lemon juice
3 eggs
½ cup all-purpose flour
½ cup milk
½ teaspoon salt (optional as far as I’m concerned)
2 tablespoons butter (or substitute as long as it bakes well)
Ground Nutmeg &; a pinch of cinnamon (Saigon if you have it)
Sour cream (also optional)

Combine peaches, sugar and lemon juice in a bowl and set aside.
Beat eggs until fluffy, add flour, milk, &; salt (if using it) and beat until smooth.

Place butter in a 10 in. skillet, bake at 400º for until melted (3-5 min). Pour batter into the hot skillet. Bake for 20-25 minutes till pancake is puffy all over.

Fill with peach slices.
Sprinkle with nutmeg and cinnamon.
Serve with sour cream (or not). I like to serve it with whipped cream or ice cream (no, not for breakfast but who says you can’t eat a pancake any time of day ;)

Oh my Toni~ Peach Pancakes on a Sunday morning!.... About once a month I ask my husband to make me banana walnut pancakes, but with fresh peaches just down the block at Pike Place Market, I am hitting the print button on this must have recipe!

Toni, These sounds simply delicious. Peaches will be in season here soon. Blueberries are in season now and might also tast mighty good in this recipe or even peaches and blueberries in the same batch.
