Mashed “Potatoes” Recipe - Cauliflower Style

I have been out of town for the past few days at a seminar; I thought I would have internet access but there seemed to be problems, and I wasn’t able to do much more than hit "public" and post the drafts I had lined up.

Recipe BookThe previous cauliflower post should have had this recipe in with it but I see it got lost in the translation; and since some of you asked; here it is.

A friend gave it to me so I'm not sure where it came from; I changed a couple of items but this is what I use and they always turn out great.


Mashed Cauliflower "Potatoes"

4 Cups of cauliflower florets

1 Tablespoon of Butter or butter substitute; I use Smart Balance most of the time.

1 oz. of milk or fat-free half & half. (or not fat-free half & half).

A pinch of salt and a pinch of freshly-ground black pepper.Food Processor

Steam or microwave the cauliflower until it's soft.

Puree it in your Cuisinart or whatever adding the butter and milk to taste. Season with salt and pepper.

Serves 4

I have heard of these faux mashed potatoes.  I havent tried them yet beacuse I just love good old mashed potatoes with melting butter or gravy dripped over them.  Does nothing for my wasteline though...

Belinda - I love those too except for the gravy; I've always disliked gravy.

Rebecca - how about the posting the recipe for the soup. Sounds good.

Is this much better for you than the regular potatoes?  I'm assuming so since carb-free is the healthier option.

Tanja - you're welcome :)

Kerrie - potatoes have a lot of good stuff in them too so I wouldn't cut them completely; but this makes a nice change once in a while. And if you're trying to lose weight, this is one way to cut down.

I love cauliflower and eat it regularly.  I steam and mash and add butter and salt.  YUMMMY!
