Mashed “Potatoes” Recipe - Cauliflower Style
I have been out of town for the past few days at a seminar; I thought I would have internet access but there seemed to be problems, and I wasn’t able to do much more than hit "public" and post the drafts I had lined up.
The previous cauliflower post should have had this recipe in with it but I see it got lost in the translation; and since some of you asked; here it is.
A friend gave it to me so I'm not sure where it came from; I changed a couple of items but this is what I use and they always turn out great.
Mashed Cauliflower "Potatoes"
4 Cups of cauliflower florets
1 Tablespoon of Butter or butter substitute; I use Smart Balance most of the time.
1 oz. of milk or fat-free half & half. (or not fat-free half & half).
A pinch of salt and a pinch of freshly-ground black pepper.
Steam or microwave the cauliflower until it's soft.
Puree it in your Cuisinart or whatever adding the butter and milk to taste. Season with salt and pepper.
