Sweet Apple Bread Pudding with Lemon Sauce - A Lithuanian Dessert

A Lithuanian  friend of mine always brought the tastiest things to our African Violet club me
etings. (We all took turns at refreshment). Thanks Ilse.

I've always loved bread puddings.This is one she made and I had to have the recipe. It’s Sladky Pudding Z Yablokami I Limonnov Podivkoy.  I know what Pudding mean but as for the rest, the only word I understand in that is limonov.....I think that mecookingans lemon.....I could be wrong.

Sweet Apple Bread Pudding with  Lemon Sauce

  • ½ c unsalted butter
  • 1 ¾  c milk
  • 6 slices day-old white bread, crusts removed, cubed
  • 2 dessert apples, peeled, cored and sliced. (my preference is Galas or Braeburns)
  • 2 eggs
  • ¼ cup Greek yogurt
  • ½ tsp vanilla extract
  • dash of almond extract
  • ¼ tsp ground allspice
  • ¼ tsp salt
  • to 2/3 c dates, finely chopped (I use Craisins when I can’t find) dates.
  • 5 tsp wheat germ (I used some crushed cereal instead since I can’t eat wheat germ).For the sauce:

For the sauce:

  • ¼ c sugar
  • 1 Tbsp cornstarch
  • 1 ¼ c water
  • 3 Tbsp butter
  • 3 Tbsp fresh lemon juice

Heat the butter, milk, and sugar together in a saucepan over low heat until the butter melts and the sugar is dissolved. Set aside.

Combine the bread cubes and apple slices in a baking pan large enough to do in one layer. In a bowl, whisk together the eggs, yogurt, vanilla and almond extracts, the allspice and salt. Stir in the milk mixture and the dates.

Pour the liquid over the apples and bread and leave to soak for 10-15 minutes. While that’s soaking, preheat the oven to 350⁰. Sprinkle the top of the pudding mixture with the wheatgerm (or whatever you using)  and bake for 40 minutes or until puffy and golden brown.

Make the sauce: Stir the sugar and cornstarch and the water in a pot over high heat till boiling. Add the butter and lemon juice. Stir until the butter is dissolved, remove from heat.
Serve pudding warm with the lemon sauce.

Fred - I'll change it to day-old bread. Bread pudding is ALWAYS made with day-old (stale) bread.
